Deadline Dishes — Skillet Lasagna with Tara Andrews

I live in upstate New York with my, supportive husband and two children – who make everything worthwhile, and at times challenging. J  My dream job is to write full time, but until then you’ll find me managing the business office of a community hospital.  In addition to work and family, I serve on the auxiliary of our local fire department – my husband is a volunteer firefighter (lucky me!).  I’m also a procrastinator (advanced-level) and recently discovered Pinterest, which could be dangerous.

I’m not big fan of pasta – at least not served up with plain ole’ marinara.  Add a cream sauce and grilled chicken and that’s a different story.  I think it goes back to those days growing up when money was tight and spaghetti became a staple.  I’ve had enough to last a lifetime.  LOL.

Years later, I’m a mom in need of fast and financially friendly meals and pasta still fits the bill.  Not only that, but my kids Love (with a capital L) pasta—they’re still young yet.  They’d eat it every day if I let them.  So I’m always on the lookout for creative recipes to make things interesting.

Enter skillet lasagna.  I found this particular recipe on Pinterest recently and gave it a shot.  Kids loved it and it was super easy to make since it calls for a jarred sauce which cuts down on prep.  This is important because I work full time during the day and I need meals that come together 1-2-3 in order to have more time to write in the evenings.

Serves 6.

Ingredients

  • 1 lb. Ground Beef
  • 1 lb. Mini Farfalle/Bow Tie Pasta (mini cooks faster!)
  • 24 oz Jar of Spaghetti Sauce  (my kids don’t like sauces with tomato pieces)
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • ½ tsp Garlic Powder
  • 1 tsp Italian Seasoning
  • ½ cup Shredded Mozzarella Cheese (I usually add a little more)
  • ½ cup Sour Cream
  • Parmesan Cheese, if desired

Instructions

  1. In a skillet, brown the ground beef until fully cooked; drain.
  2. Meanwhile, cook the pasta according to package directions.
  3. After pasta is cooked, drain. Return to pot and toss with the olive oil.
  4. Add the spaghetti sauce to the pasta and stir.
  5. Next, add the cooked ground beef, seasonings, mozzarella cheese and sour cream to the pasta. Fold together and cook over low heat until cheese is melted.
  6. Serve and sprinkle with Parmesan cheese if desired.

Editing Tips

So you just got your first set of edits on your manuscript. Congratulations!!! You’re officially in the trenches with the rest of us. 🙂 Currently, I’m knee deep in edits on 1 novella, awaiting edits on a second novella as well as 1 novel, and I’m writing my 13th book. The To-Do list of a writer is always long!

Anyway, back to editing. Yay! One of my favorite parts of the writing process. I love this stage because now is when I really make a book shine, with the help of an excellent editor, of course. The end product is *always* better than it started out. That’s why having a good editor—one who sees your work, really gets your style and voice—is so important. (If you’ve gotten an editor that you don’t click with, don’t panic, there are tips for dealing with that too, but that’s a topic for another day. Rest assured, you will survive and so will your book! For now, let’s just assume all is well in editor/author world, since it usually is.)

You’ve gotten an email and it’s from your new editor. Yay! But also holy shit! Excitement, nervousness, self-doubt, nausea 😉 — It’s all normal! You swallow your nerves and open the file. And then you want to faint.

Maybe you see a mountain of track changes on the righthand side of your page. Maybe you see a bunch of colored and underlined words. Maybe the first sentence after your Chapter One heading used to be the first sentences under your Chapter Two heading.

Holy edit monster!

Breathe. It will be okay. I promise.

Here are a few easy steps I use to tackle edits, even the really difficult ones:

  • Breathe. No really. Take a breath. This is all a part of the process. Every single writer in the history of writing will have to deal with edits at some point or another and they all lived to tell the tale after. You will too. Okay. Moving on.
  • Read any big picture notes you were given from your editor. Maybe your hero has moved past alpha and into asshole territory. Maybe a secondary story line just clutters up the book and doesn’t add anything worth keeping it. Maybe there’s a gap in the plot you didn’t realize or continuity problems. There are any number of big picture issues that could come up. Take a few minutes to read the notes,  more than once if you have to.
  • Walk away. You might be upset. You might think your editor has popcorn for brains. You might think the changes are too big and you can’t possible do them! Just walk away for a bit. Let that big picture stuff sink in. Those notes are going to marinate in your brain while you do other things. In an hour, or a day, you might even see that your editor is right. Holy shit! LOL. It happens. 🙂
  • Move on to line edits. That’s all the track changes bubbles you see on the right side of your once-beautiful document. Work through those changes as you’ve been told to by the editor. Every publisher has a slightly different way they like to work through edits so if you’re not sure, ask. Your editor would rather take the 2 seconds to answer your questions then have to redo the document because it’s not how it’s supposed to be. In most cases, you’ll accept or reject the editor’s suggested changes. Simple, easy, and strangely satisfying.
  • “But I don’t want to!” It’s your book. Your work. Your words. And you have to be proud of it when it goes into a reader’s hands with your name on the cover. Sometimes, an editor will suggest a change you really don’t want to make. Maybe it changes the meaning you intended. Maybe it changes the essence of who the character is. Maybe you just really like the word scrumptious and feel justified using it 5 times in one paragraph. If you really can’t get on board with a change, then leave it alone and include a comment about why. Don’t just ignore suggested revisions! If you’re going to fight for scrumptious to stay, your editor needs to know why. But you might just find that if you think about it for a minute, your editor is right and maybe they saw a flaw that you didn’t. This is why we have editors! They see the things our tired eyes have missed. They see the things that we love but that readers will say, “What the hell?” to.
  • Go back and read your big picture notes again. Depending on the notes, you may have been able to work on these at the same time as your line edits. But if not, go back now, read the notes again, and get to work. Often a change I was dead set against now seems completely logical and I wonder how I didn’t see it myself. If not, now is the time to discuss it with your editor. Talk it out. It doesn’t mean they’re going to change their minds about the edits you need to do, but talking to your editor can help you work through any lingering questions or reasons why something needs to be changed or fixed.
  • Send that baby back! You’ve done it. You’ve survive your edits without the world crumbling around you. Treat yourself to something nice, an evening out, a delicious dessert, a couple of hours to read a book for fun that you didn’t write yourself! Go on, you deserve it.

Rest up! You’re going to need all your strength back for when the second edits come in. Just sayin’…

Deadline Dishes — Green Enchiladas with Laura Chapman

 

Today I’ve got the fantastic Laura Chapman with me to share one of her awesome deadline recipes. But before we get to the recipe, let’s find out a little bit more about Laura!

Chapman found a way to mix her love of romance and humor as a women’s fiction blogger and author. A 2008 graduate of the University of Nebraska-Lincoln, Laura studied journalism, English and history. She spent four years traveling the country as a writer/photographer, and currently works in communications. March is the month of St. Patrick’s Day, which means I’m often looking for ways to slip a little green into my meals. As a pescetarian – vegetarian who eats fish occasionally – it’s important for me to work some protein into those same dishes. And as a writer, it’s absolutely crucial dinner is something I can throw together quickly and re-heats up well.

That’s where my Green Enchilada comes in to play. Made out of kale, spinach and black beans, this dish has plenty of protein, fiber and other nutrients that give me the energy I need to balance a writing career with a full-time job. It’s also delicious.

Here’s what you’ll need to make this recipe:

  • 2 ½ cups frozen kale
  • 2 ½ cups frozen spinach
  • 1 can black beans
  • ½ cup chopped onion
  • 1 cup sour cream
  • 10 corn tortillas
  • 1 can enchilada sauce
  • 1 cup mozzarella (or whatever cheese you’d like to use)

Pre-heat your oven to 375 degrees. In a large bowl, defrost your frozen veggies. While that’s going on, chop up your onion and set it aside. Once the vegetables are heated, mix in the black beans, onions and sour cream. I prefer to use a light or low fat sour cream when cooking to cut out a few calories. You could also try subbing a Greek yogurt, but make sure it is plain.

Toss the tortillas into the microwave for a few seconds to soften them. Corn tortillas are brittle, especially if you store them in your fridge, and this will make them easier to work with.

Scoop large spoonfuls of the filling into the corn tortillas leaving enough room to fold the tortillas like a blanket around a baby.

 

Line the filed tortillas in a 9 x 17-inch baking dish. Pour the enchilada sauce over the top. Sprinkle the cheese over the top. I use a skim mozzarella for the same reason I use the light sour cream.

Place the pan in the center of your oven and bake for half an hour. This is the perfect amount of time for me to sit down and tackle some marketing or write a couple of pages before the timer goes off.

Depending on how your cheese looks, you may want to turn it to broil for the last minute or two of baking to give the cheese an extra bit of melt.

You can do whatever you like for serving sizes. I prefer to cut it into 10 pieces, casserole style, because this is a hearty enough meal to leave me full. I typically serve this with a side of chips and salsa – I love chips and salsa – but it goes equally well with Mexican rice, beans or a salad.

Deadline Dishes — Chocolate Cake with Nancy C. Weeks!

Hi Heather,

Thanks so much for inviting me on your lovely blog today so I can share my absolute favorite recipe. Who doesn’t like a great slice of chocolate cake? Well, the one I brought is my family’s favorite. I have made this recipe more times than I can count for all kinds of occasions. It’s a toss in a bowl and mix type of cake. It taste so much better than any cake mix from a box and just as easy.  Believe or not, I have even mailed it to college kids across the country, and according my kids, it arrives tasting like I just made it.

Now a little about me:

I spend my days creating happy-ever-after romantic suspense novels with a unique supernatural element. I have been reading romance novels non-stop since college where I met and married my hero. We spent the next several years honeymooning and working overseas. Thirty-three years later, we still hold hands under the table. My son is off on his own now and my daughter is almost through college. Most days, you can find me typing away at the kitchen table now called The Mommy Cave. In the summer, I spend my day outside airing out my brain writing away as the local bird population keeps me company.

Writing has become my second passion. Next week, March 10th, I’ll be release the third book in my Shadow series called In the Shadow of Malice. I’m so excited about this new book I can’t sit still. The Best Everyday Chocolate Cake Ever

  • 2 C sugar
  • ½ C butter (one stick)
  • 2 eggs
  • 1 tsp vanilla
  • 1 C milk
  • ½ C cocoa powder or 4 squares of unsweetened chocolate
  •  2½ C flour
  • 1 tsp. baking powder
  • 1 tsp baking soda
  • 1 C very hot water

Melt chocolate in microwave for 1 minute.  In a mixing bowl, mix butter, sugar, eggs, and vanilla.  Add chocolate slowly.  Add flour, baking soda, baking powder, alternating with milk.  Mix well for about 2 minutes.  Slowly add the hot water.  This batter will be very liquidly.  Mix until well blended.  Pour into a buttered 13×9-inch baking pan or 2 round cake pans. Bake at 350F for 30 minutes.  Cool before frosting if you have time.  It is wonderful warm too.

 

The Most Wonderful Chocolate Frosting in the World

[It takes all of 5 minutes. I suggest you make a double batch, one for the cake and one for your spoon] 

  • Bring to a boil:
  • 1 stick of butter
  • 4 Tbs. cocoa or 2 squares of unsweetened chocolate
  •  ¼ C of milk
  • Optional: ¼ tsp almond extract

Pour over 1 pound of powdered sugar.  Mix well and pour over cake.  The cake can be served warm or once cooled, the frosting will taste like fudge.
