Having worked as a bartender, shipping clerk, concierge, document translator, European history doctoral candidate, and more as she moved through Illinois, Indiana, Ohio, New Jersey, Georgia, and Virginia, Lola decided she needed a more portable career. Writing fit the bill.

My family and I love this meal that can be on the table in a half an hour. This is my go-to “pantry meal.” I often double the recipe so the kids can take plan-aheads in their lunches.
- Ingredients:
- 1 package yellow rice (I use 8+ ounces – depends what is on sale)
- 1 chopped onion
- 4 cloves garlic, chopped
- 1 can of black beans, rinsed
- 1 14 oz can (or larger) diced or petite diced tomatos
- ½ cup frozen corn
- 1 tsp cumin
- Olive oil or cooking oil
- Instructions:
- 1. Prepare rice according to package
- 2. Sautee onions & garlic in oil in a medium skillet until onions are soft
- 3. Add black beans, and can of tomatoes with liquid, frozen corn and cumin. I usually add a quarter cup of water, too. Bring to a boil, reduce heat and simmer for about 15 minutes, stirring occasionally.
- 4. To serve, make a well in the yellow rice and spoon the black beans over the top.
- 5. Enjoy! There are plenty of ways to customize this meal. My son likes to add diced avocado, my daughter insists on cheese, my husband breaks out the hot sauce and I add all three.
