Deadline Dishes — Beef and Barley Soup

Blogbanner_HTI don’t know about you, but when the weather turns cold, there’s just nothing I appreciate more than coming home from after school activities to find a house filled with the scent of a delicious meal cooking! This is one of our favorites! Everyone who tries it, loves it! It’s simple, quick, delicious and filling. And best of all, it goes in the crockpot so your meal-time prep is minimal!

  • Ingredients:
  • 2 Cans Beef Consume Soup
  • 1 Can French Onion Soup
  • 1-2 Cans worth of Water
  • 1/4 tsp minced Garlic (I use the kind pre-minced in the jar)
  • 1 Tbsp Italian Seasoning
  • Pepper to taste
  • 1 Bayleaf
  • 8 Tbsp Barley (uncooked)
  • 1 Pound Ground Beef
  • 1/4 Cup Ketchup (Could also use diced tomatoes, paste, sauce, whatever you have on hand)
  • 1 Cup Carrots chopped (as much as you want)
  • 1 Cup Celery chopped (as much as you want)

 

  • Directions:
  • 1. Cook ground beef in a skillet and drain off excess fat.
  • 2. Add all ingredients to crockpot in any order. Stir.
  • 3. Cook on low for approximately 5 hours or until barely is cooked.
  • 4. Serve with warm rolls and butter.
