Deadline Dishes — Lemon Garlic Orzo Soup with Stephanie Haefner

Today for Deadline Dishes and Drinks I have a good friend and a FANTASTIC author! Stephanie and I met a couple of years ago online through the writing community and while we have yet to meet in person (One day!) we formed a fast friendship. She’s definitely someone I turn to for advice, support and definitely when I’m looking for a good book! So here she is!
Stephanie Haefner is a wife, mother of two, and contemporary romance novelist from Buffalo, NY. A member of Romance Writers of America and the Western New York Romance Writers subchapter, she loves creating sassy heroines and tossing them into sexy circumstances. When not writing, she celebrates her sassiness with dance and zumba classes, and her nerdiness with boybands and Disney World.
Summer is generally not the time of year people think “soup” but this one is pretty light and fresh and if summer had a signature soup, this might be it 😉 
Lemon Garlic Orzo Soup
 
Ingredients
  • 1 T olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 carrot, roughly grated (I usually add 3-4 and julienne them on my mandolin)
  • 6 C chicken broth
  • ½ C orzo
  • ½ lemon, zest and juice
  • ½ tsp salt
  • ¼ tsp pepper
  • 1 tsp dried basil
Instructions
  1. In a large pot heat olive oil.
  2. Add in garlic and onion. Sauté until translucent.
  3. Add in carrot. Sauté for just a few minutes.
  4. Pour in chicken broth. Season with salt and pepper.
  5. Add orzo. Cook until tender with a slight bite.
  6. Squeeze in juice of half lemon and add zest.
  7. Season with basil.
  8. Serve.
I also add one cooked and shredded chicken breast to make it a little heartier.
