Deadline Dishes — Garden Chicken Salad with Lynn Crandall

 

Today I have fellow Crimson Romance author Lynn Crandall here to share one of her delicious recipes! And just in time for summer picnics too. Yum. Thanks for being here, Lynn!

This salad makes a perfect main course dish for warm weather, served with fruit and bread. But it’s also a great side. The dish has gone with me to many potlucks and been a main attraction for family meals. My family tries to eat healthy. I’m not sure if this salad qualifies as healthy, but it’s light and has vegetables in it!

Garden Chicken Pasta Salad

 

  • 3 cups rotini pasta, cooked and drained
  • 2 cups broccoli flowerets, raw or cooked
  • 1 ½ cups ranch dressing
  • 2 cups (or more if you like) cooked chicken breast, cubed
  • Dash of Mrs. Dash onion and herb

Toss all ingredients and refrigerate. Serve cold.

Get creative and add a variety of ingredients to your liking. Try chopped pepper, slivered onion, sliced purple grapes, diced apple.
